Location: We are seeking an experienced Outlet Sous Chef for our Vancouver Convention Centre operation.
Compensation: $34.00 - $37.00 per hour.
Sodexo Live! is the Official Supplier of Food and Beverage Services to the Vancouver Convention Centre. Located on Vancouver’s waterfront with a dramatic mountain backdrop, the award-winning Vancouver Convention Centre offers one of the most beautiful settings in the world. As British Columbia’s flagship convention centre, the facility hosts more than 500 events and welcomes hundreds of thousands of attendees each year, while generating significant economic activity for the Province.
Principal Function:
The Outlet Sous Chef is the management position in a Sodexo Live! commercial kitchen. The Outlet Sous Chef assures that foods are prepared using fundamental cooking techniques, seasoned for maximum taste and flavor, and served in an aesthetically pleasing manner.
The Outlet Sous Chef directs all aspects of foodservice production and service, ensuring that approved food safety and sanitation guidelines are followed. The Outlet Sous Chef oversees the preparation and execution of the unit’s menus, with a primary focus on managing culinary support for Outlet Operations, including but not limited to the Bistro, LOT 185, and Coal Harbor Café. The Outlet Sous Chef collaborates closely with the stewarding and Outlets Operations teams to ensure smooth day-to-day operations and maintain clear, effective communication.
The Outlet Sous Chef is responsible for training, mentoring and helping to develop other Culinarians, and for monitoring and organizing the flow of activity within the kitchen in a way that complements and supports the overall operation.
Essential Responsibilities:
Support the Senior Culinary team in a fast-paced, quality production kitchen, ensuring successful execution of large-scale production for a variety of banquet and convention events and for our Outlets Operations.
Maximize the productivity of a large culinary team, providing training, coaching and supervision, coordinating all related culinary activities
Contribute to menu planning with the Senior Culinary team.
Work directly with the team, managing their daily tasks, delegating and assisting during operations as required.
Collaborate with the Outlets Operations Team to ensure effective menu execution and the timely delivery of F&B service.
Conduct tastings and presentations as needed, especially during menu updates or for custom events.
Coordinate with the stewarding team to manage equipment and tools required for Outlets Operations.
Work closely with the Outlet manager to forecast for events and help minimize overproduction or underproduction.
Stay current on industry/competitive trends and creating strategies for improvement and to maximize food and beverage revenue.
Demonstrate an aptitude in new cooking techniques and a variety of cuisines; help to develop workable, efficient recipes and ensure their effective implementation.
Ability to check on quality of food prep, tasting food and ensuring proper preventive measure in place.
Comply with all established health, sanitation and safety procedures.
Adhere to Sodexo Live! standards for food quality, taste, flavour and presentation.
Ensure that food is portioned and presented according to standards, as well as guest specifications and preferences; Inspect portions and appearance of food prepared by other staff members to ensure consistent adherence to Sodexo Live! standards for food quality.
As part of the leadership team, strongly and positively influence team collaboration within the unit culinary team members to achieve operational objectives.
Participate and assist in coordinating the flow of work within the culinary department to maximize quality and efficiency.
Apply consistent focus on the customer by paying close attention to detail, accommodating special requests and never allowing less than perfect food product to leave the kitchen.
Participate in and foster positive team relations with both front and back of the house staff.
Perform other related duties, tasks and responsibilities as required from time to time.
Contribute to a goal of 100% client and guest satisfaction through personal commitment to customer service and leading the culinary team by example.
Qualifications/Skills:
Formal training at an accredited culinary school. Food Safe Certification.
Demonstrated passion for high-quality culinary practices, with 5+ years of similar experience in a high-volume hotel or convention centre.
Experience in large Banquet events in a Facility that holds multiple events at once is required.
3+ years experience in a Management level Culinary position; strong leadership and decision-making skills, with proven ability to lead a team and direct employees to assigned activities.
Proficient written and spoken English communication skills in order to effectively interact with team members in a busy environment and for safety within the kitchen.
Ability to follow written and oral direction.
Ability to work under pressure and independently.
Creative and solutions driven.
Computer proficiency specifically in Outlook, Word and Excel.
Strong focus on service excellence and a positive attitude that contributes to collaboration and team work.
Must be self-motivated and be able to motivate a team.
Must be a highly organized, detail-oriented individual, with the ability to handle multiple tasks at one time, and work to numerous deadlines at once.
Must be highly health and safety conscious and knowledgeable and motivated to be actively involved in enhancing workplace wellness.
Ability to work shifts across 7-day opening hours, including mornings, days, evenings and weekends.
Other Requirements:
Must be able to stand and exert fast-paced mobility for entire shift. Must be able to frequently lift and carry food and other items weighing up to 50 pounds and occasionally greater. Must be able to go from warm to cold climates (workstation to coolers).
Hours may be extended or irregular to include nights, weekends and holidays.
